This test is based on the Stroop Effect, a psychological phenomenon that describes the difficulty in naming the print colour of a word when the text refers to an 'incongruent' color. This happens because your brain goes cuckoo when it sees an interference between the written word and the colour it's is printed in. Crazy, isn't it?
