Down the center
One of the best things you can do is try to aim for the center lane of the road as much as possible. As you sling around the corners, try to time your taps to make sure your car ends up in the center lane when it comes out of the drift. Your car will automatically wobble a little after a curve, and this will help ensure you don't fly off into the side of the road.
This is especially true once you get to the end of the level, and you'll blast past a number of gemstones. They're all located in the middle lane, so you want to try and set yourself up to collect as many as possible.
Take it easy
Besides aiming for the middle, you want to try and keep your drifting as gentle as possible. The physics here are rather touchy, so flinging your car around a curve is a sure way to land in the grass. Use a light touch, and your car will straighten out all the faster after it rounds a turn.
Being careful with your slinging will also help you achieve a perfect drift, and doing so enough times will kick you into a different color mode. There doesn't seem to be much difference between regular and perfect mode, but at least it still looks neat.
Rise to the challenge
In order to collect more of the gemstones that will enable you to unlock different car designs, don't forget about the different achievement challenges the game offers you. Each of these will ask you to complete a specific task in order (for example, score 50 points), and you'll be rewarded with a number of gemstones.
Changing the design of your car doesn't seem to be anything besides cosmetic, but it gives you something to work towards. Besides, who doesn't like flinging a cool-looking car around the various twists and turns in the game.
